Sauvignon Blanc, often called Fume Blanc, is known for producing easy to drink wines with refreshing acidity and distinctive grassy or melony aromas. Notable Sauvignon Blancs come from many parts of the world, including California, the Loire region of France, Italy, New Zealand and South Africa.
Sauvignon Blanc is a very vigorous vine, susceptible to bunch rot and powdery mildew, that requires some work in the vineyard to bring out its best characteristics. In the winery, Sauvignon Blanc is usually tank-fermented at cool temperatures to retain its fresh fruity aromas, and has a short stay in small amounts of new oak on its way to the bottle.
